  1. 2 tbsp coconut milk powder (I used maggi)
  2. 1 cup milk powder
  3. 1 cup fresh cream (I used amul)
  4. 1/2 cup castor sugar
  5. 1 cup Cold milk
  6. 1 cup tender coconut (soft malai inside the green coconut shell)

Steps to make to make Tender coconut ice cream

  1. Peel the soft light brown part of the tender coconut.In a mixer first grind the coconut to fine chunks.divide it into two bowls. Use one bowl of tender coconut,add both milk powders, sugar,cold milk and churn to a smooth paste.
  2. Add in cream and blend again. Transfer it to an ice cream tin and cover it with a cling sheet and foil. Let it semi-set for three to four hrs.
  3. Now take it out and add in the second half of chopped tender coconut. Mix and let it set. Take it out of the freezer five to seven minutes before eating. Scoop out and enjoy this smooth & chunky natural ice cream! Once you will have this, I am sure you are going to fall in love with this ice cream.!.
  4. Note : Mine "tender coconut" was very thick almost just like our other coconut. But it was very soft not hard. If you use the softer malai form then no need to peel. Simply wash and pat dry and follow the rest of the steps.
